Mmmm these cookies. Usually this isn’t my favorite type of cookie but oh my…they were good. These White Chocolate Cherry Cookies were more of a shortbread kind of cookie – a little more dense, not crazy sweet. They were nice and soft on the inside with a light sugar glaze on the outside. The white chocolate is very subtle and really complements the cherry nicely. Just the right amount of sweet to cure that sweet tooth.
There aren’t too many helpful hints for this recipe because it’s nice and simple. I would suggest using whatever type of jam you like best. I really loved the cherry/white chocolate combination but the original recipe calls for raspberry [my all time favorite] Whichever jam you choose, enjoy!
