Although it seems like fall is right around the corner, I am holding on to the beautiful Summer days we are still enjoying in New England. Pumpkin will have its time, but not in August (or September..it’s my rule.) I’ve always wondered what exactly an icebox cake was. What I learned is that it’s a cake that always involves whip cream, some kind of cookie, and doesn’t require baking. In this case it’s whip cream + graham crackers + strawberries. Add zero baking minutes and I’m pretty sure it’s a recipe for magic. It takes a little time to layer the strawberries but the results are worth it. Drizzle a little basket weave of melted chocolate on top and there you have it. Enjoy the Summer while we still have it!
