Time to get back to the blog! It’s been a crazy and exciting few weeks for us but I’ve neglected Just a Sliver!  So here we go, some amazingly delicious chocolaty brownies. Brown Eyed Baker did a post on the Best Brownie recipes and being an absolute lover of peanut butter cups, I was instantly drawn to this recipe.  I also made the Chewy Brownies separately (the base for this recipe) and they did not disappoint. Seriously tasted better than the box brownie which is VERY hard to do. You take that awesome recipe and add more chocolate, some peanut butter, peanuts, and Reese’s Peanut Butter Cups and you just created chocolate/peanut butter heaven. I let these brownies set over night so I could slice them into perfect squares. Definitely a rich and delicious brownie! Enjoy!!

Peanut Butter Crunch Brownies

Ingredients

    Chewy Brownies
  • 1/3 cup cocoa
  • ½ cup plus 2 tablespoons boiling water
  • 2 oz. unsweetened chocolate, finely chopped
  • 4 tablespoons (½ stick) butter
  • ½ cup plus 2 tablespoons vegetable oil
  • 2 large eggs
  • 2 large egg yolks
  • 2 teaspoons vanilla extract
  • 2 ½ cups sugar
  • 1 ¾ cups all-purpose flour
  • ¾ teaspoon salt
  • 6 oz. bittersweet chocolate cut into ½-inch pieces

  • 1 recipe of favorite brownies (ingredients above)
  • ½ cup salted peanuts
  • 8 Reese’s peanut butter cups, chopped
  • 1 ½ cups milk chocolate chips
  • 1 ½ cups creamy peanut butter
  • ½ tablespoon unsalted butter
  • 1 ½ cups Rice Krispies cereal
  1. Adjust oven rack to lowest possible position and preheat oven to 350°.
  2. Line 9x13” baking pan with foil, leaving approximately 1-inch overhang on all sides, spray with non-stick cooking spray.
  3. Whisk cocoa and boiling water together in a large bowl until smooth. Add unsweetened chocolate and whisk until chocolate is melted.
  4. Add butter and oil, whisk.
  5. Add eggs, yolks, and vanilla and whisk until smooth. Whisk in sugar until fully incorporated.
  6. Add flour and salt, mix with rubber spatula until combined. Fold in bittersweet chocolate pieces
  7. Pour batter in prepared pan and bake for 30 minutes.
  8. Remove pan from oven and sprinkle the top with peanuts and chopped peanut butter cups - return to oven and bake for 30 minutes.
  9. While they finish baking, melt the chocolate chips, peanut butter, and butter in medium saucepan over medium-low heat. Stir in cereal to evenly coat.
  10. Remove brownies from oven and evenly pour the chocolate and peanut butter mixture over the top of the brownies. Cover evenly and refrigerate for at least 2 hours (mine took longer than two hours so I refrigerated overnight) before cutting and serving. Store in refrigerator.
