I call them mini’s because they’re probably only 2-3 inches (in addition to using actual mini M&M’s.) Some people prefer large, flat cookies but for these I wanted to do something smaller that were full of chocolate chips and M&M’s. If you like larger cookies, use a medium size cookie scoop instead of the tablespoon.
I also turned some of these delicious cookies into mini ice cream sandwiches. Unfortunately it was so humid that it wasn’t going to work for many but I did a few quickly, wrapped them in plastic then into a Ziploc bag, and put them in the freezer overnight. So, so good! If you want to make yours into sandwiches, scoop a bit of vanilla ice cream into the center of a cookie and sandwich it with another cookie on top and voila. Enjoy them either way!
