I have no idea why it has taken me so long to blog this recipe because it makes the PERFECT pancake. A friend gave me this recipe when we lived in Germany (Thanks, AK!) and I have been using it ever since. It is so incredibly simple and tastes just like Bisquick or any other pre-made mix. You will never need to keep pancake mix in the house again! Of course, I added chocolate chips but this recipe can be made as regular homestyle pancakes or the base of any other type of pancake [how about blueberry?!] Enjoy these homemade pancakes for your next weekend brunch!
- ¾ cup flour
- ¼ cup sugar
- 1 teaspoon baking powder
- Pinch of salt
- 1 egg
- ¾ cup milk
- In medium mixing bowl, mix flour, sugar, baking powder, and salt.
- Add egg and milk, whisk until smooth.
- In a pan on medium heat, melt a little butter. Scoop batter onto hot pan. Add chocolate chips.
- Flip pancakes when batter has bubbled.
