I think homemade Funfett Birthday Cupcakes deserve a re-posting. Originally I posted this recipe in January but I was making them for another birthday so I thought I would share it again. PLUS I received this super cute cupcake stand for my birthday from  a dear friend – definitely photo-worthy! This particular recipe yields 12 cupcakes but if you’re looking for 24 cupcakes, refer to my original Funfetti Cupcakes Post. This time, I was more careful with the addition of the sprinkles so they didn’t dye the batter as much as the first time around. You really must be gentle when folding them in and be careful not to over-mix. An incredibly easy recipe for homemade funfetti!!

Funfetti Birthday Cupcakes

Yield: 12 cupcakes

    Funfetti Cupcakes
  • 1 2/3 cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick) butter, melted
  • 1 cup sugar
  • 1 large egg
  • ¼ cup sour cream
  • ¾ cup milk
  • 2 teaspoon vanilla extract
  • Vanilla Buttercream
  • 2 sticks (1 cup) butter, softened
  • 2 oz cream cheese
  • 3 ½ cups confectioners’ sugar
  • 2 teaspoons vanilla extract
  1. Preheat oven to 350°. Line muffin tin with paper liners.
  2. In small bowl, mix flour, baking powder, baking soda, and salt.
  3. In microwave safe bowl or in small saucepan on stove, melt butter. Pour melted butter into large mixing bowl and add sugar, mix well. Place mixture in refrigerator for 2 minutes to cool.
  4. Remove mixture and add egg, sour cream, milk, and vanilla extract. Mix well until combined.
  5. Gradually add flour mixture to large bowl and mix until no lumps remain.
  6. Bake for 18-20 minutes or until toothpick is inserted in center and comes out clean.
  7. For the frosting: beat butter and cream cheese on medium speed for five minutes. Add vanilla extract, mix for another minute. Gradually add sugar and mix for three minutes. Gradually add food coloring if applicable. Best to use Wilton Gel Food Coloring especially if you're making it a deep or bright color.
  8. Frost completely cooled cupcakes.

    I made this before from the recipe at Sally’s Baking Addiction – and you’re spot on in your suggestion to be careful using the sprinkles in the batter. I also like that you dyed the frosting, they look so delicious!
