This banana crumb cake…..oh my gosh. The cake is so light and fluffy while the topping is a little crunchy and so sweet. It’s perfect for breakfast or dessert. I do recommend warming your piece up in the microwave for about 20 seconds [it’s good at room temperature too but next level when a little warm.] This is a great recipe to make ahead of time if you have company coming for a visit – especially great for your holiday visitors as we know the holidays will be here before we know it! Bake the night before and warm it up in the oven before breakfast the next day.
A side note about working with frozen ripe bananas. When I have ripe bananas but no time to bake with them I’ll put them in the freezer. When you’re ready to use them, bring them to room temperature in a bowl on the kitchen counter [use a bowl so they don’t get banana juice all over.] When they’re warm, peel the bananas and put them in a strainer for a few minutes to drain the excess water. Never let a good ripe banana go to waste!
