With just over a week to Thanksgiving, it’s time to finalize your baking plans! This recipe is one that I was lucky enough to try at our first Thanksgiving, in October. My husband’s Aunt is an unbelievable baker and she made this Apple Streusel Cheesecake which everyone loved. Ideally this recipe should be made in a springform pan but unfortunately my pan was damaged in the move and was leaking through the bottom. Two ruined crusts later, I needed a solution so I decided to make it into a cheesecake pie. Buttery graham cracker crust, thin but nice later of cheesecake, and a sweet apple-y topping. Have to get creative sometimes! So even if you don’t have a springform pan, the pie version is just as delicious. I even made a second mini pie (with this cute individual pie dish) because I could see the filling would be too much for the pie dish, as the springform dish holds much more. I love this recipe because it is a different recipe to bring to the Thanksgiving table while still being perfectly fall.
